Practical approach of food quality and safety management: good hygiene practices, analysis of process chart, HACCP, risk assessment

Case studies in veterinary infectiology and parasitology

The students are involved in an interactive way to (1) clinical presentations, (2) practical diagnostic works, and (3) workshops on targeted topics organised by the different sectors of the departement of infectious and parasitic diseases

Learning outcomes of the course :  
Veterinary management of animal resources

the objectives of the activities organized on monday: -familiarise the students to survey dairy and beef farms. Animal productions systems similar to systems of commercial farms will be studied. The survey follows a life cycle of the animals.

The practical work is complementary to knowledge in the field of food science acquired during the 2 courses included in the programme of the 1st year of Master (VETE1023-2 et VETE1024-1).

Case studies in veterinary infectiology and parasitology

Clinical presentations and practical workshops are promoted. The objective is to train the students to have a transversal approach in diagnostic, prevention and control of infectious and parasitic animal diseases.

Planned learning activities and teaching methods :  
Food safety and quality control tools

In interaction with the tutors, the students suggest the good hygiene practices to apply in the sector and the production establishment which is submitted to the exercice. In the second step, they draw up an full HACCP procedure for a specific processed product from this establishment.

Veterinary management of animal resources

The activity contains 5 modules Module 1: activity at experimental station
In this module, the activities are carried on every morning at the experimental station. Since these activities are variable according to the season and to the physiological status of the animals, the students are on duties during the night and the week-ends according to a time table previously fixed. The presence is compulsory. When a student is unable to be present, he will be repleaced by a colleague.

When ? 5 x 3,5 hours (See courses schedule) Where ? intra muros (Seminar rooms, previsously library) Who ? The attendance is required. Justification of any absence has to be sent to the secretary of the Department before the end of the week. If the absence is not regularized, an "A" (for Absent) final mark is attributed.

Case studies in veterinary infectiology and parasitology

The formation is provided in two consecutive weeks, including two modules per morning. The program is presented to the students the first monday. Clinical presentations, practical works and workshops are provided by the different sectors of the departement : immunology, vaccinology, epidemiology, virology, bacteriology, parasitology, mycology and wildlife diseases. The students are invited to prepare a work chosen the first monday and presented the second friday.

Evaluation will be done on the daily activities and on the presentation of a subject

Evaluation during practical work based on student's participation, files fullfilled by the student and final oral presentation.

Case studies in veterinary infectiology and parasitology

The students are evaluated on their participation during the 2 weeks and during the examination (written part and oral presentation) organised at the end of the second week.
