Course contents :  Practical approach of quality and safety management of foods from animal origin : analysis of process chart, HACCP, risk assessment
Course objective :  The practical work is complementary to knowledge in the field of food science acquired during the 2 courses included in the programme of the 1st doctorat (VETE1023-1 et VETE1024-1).
Prerequisites :  Previous lectures about Food Science (1st Master)

Who ? The attendance is required. Justification of any absence has to be sent to the secretary of the Department before the end of the week. If the absence is not regularized, an "A" (for Absent) final mark is attributed.
Written notes :  Cfr theoretical courses.
Work documents available during the practical work.
Assessment :  Evaluation during practical work based on student's participation + forms fullfilled by the student.
