Course contents :  
1. Introduction + organization of the food chains [A. Clinquart, ~ 2h]
- History - Definition of veterinary public health - (Primary) production / Transformation / Distribution / Consumption - The food chains : milk, beef, pork, poultry, plants, ... (Breeders, federations, artisanal and industrial manufacturers, distributors).
2. Basic principles for the management of food chain safety [A. Clinquart, ~ 2h]
- Notions of hazard, risk - Basic principles for the control and auto-control, traceability, withdrawal, recall, notification - Who makes what : illustration with schematic description of food chains : meat chain et milk chain (auto-control, control and role of veterinarians)
3. Stakes, importance and management of the veterinary public health [G. Daube + J. Detilleux + C. Saegerman, 8h] : the initiation is conducted via concrete examples, in which the implication of the veterinarian is highlighted.
- Ovine catarrhal fever - Zoonoses related to companion animals - Salmonellosis - Transmissible spongiform encephalopathies - Welfare and quality of animal products - PCBs and dioxins - Antibioresistance

- Illustration of the interdisciplinary nature of the management of veterinary public health
- Links with other courses related to veterinary public health
- Role and implication of the veterinarian in the management of public health (diverse functions)
