Course contents :  
Michel Paquot : Glucides. Principal sugars. Chemical reactivity and physical properties. Structure and conformation. Polysaccharides (starch, inulin, cellulose, hemicellulose,...). Fibers (wood fibers, dietary fibers). Application field of lipids. Structure and properties of fatty acids. Glycerides. Components of unsaponifiable. Physico-chemical properties of lipids. Application fields. Bernard Wathelet : Amino acids, peptides and proteins. Structure and principal properties. Exemple of protein structures (alpha-keratin, fibroïn, collagen, elastin). Protein denaturation mechanism and practical importance. Amino acids, peptides and proteins : Analysis, sequence, conformation, peptide synthesis, interactions, modifications, purification. Structure activitiy of proteins. Biomolecules analysis and purification methods. Precipitation, Partition, Ion exchange, Chromatography, Electrophoresis
Learning outcomes of the course :  
To give basic knowledge in organic chemistry of natural molecules. To draw molecular and structural properties of biomolecules.Present analysis and purification methods for biomolecules. After completing the course the student is expected to be able to give back the basic knowledge of the three main groups of compounds from biological origin : protein, lipids and glucids, to demonstrate the convergence points with the cursus in organic chemistry and to point out the first applications of the teached topics.Understand the different principles of bio-molecules separation and be able to choose the right principle in function of the molecules to separate Understand the ionization phenomenon and predict the possible effect on association, biological activity.
