Number of credits :
Master in Chemistry and Bio-industries, Professional Focus, 1st yearSecond semester4
Required preliminary complements to register in the Advanced Master in Food Science and technologySecond semester4
Advanced Master in Biotechnology and Applied BiologySecond semester4
Lecturer :  Philippe Thonart
Language(s) of instruction :
French language
Course contents :
I. Introduction : the biotechnology
II. Growth kinetic
III. Biochemical balance
IV. Bioengineering
V. Optimization of biotechnological production.
VI. Downstream processing
VII. Examples of industrial production of starters.
VIII. The enzymes in agro-food industries.
Learning outcomes of the course :
This course gives an overview of the principles used in industrial microbiology. The different steps necesary for doing a product are developped and integrated in a general production scheme. The exemples of enzymes and micro-organismes are developped.
After completing the course the student is expected to
- know the basic components of the bioreactor (vessel, pales, valves,
automation,...)
- perform basic calculation to design a bioprocess:
at the level of the microbial population (kinetic, mass balance,...)
at the level of the bioreactor (oxygen transfert efficiency, heat transfert
efficiency, mixing efficiency,...)
- perform the scale-up of a bioprocess
Prerequisites and co-requisites/ Recommended optional programme components :
Knowledges in general microbiology and in biochemistry
Mode of delivery (face-to-face ; distance-learning) :
Lectures : 24h
Practical Works : 24h
