Course contents :  1. The risk analysis :
- the risk analysis : sanitary risks (evaluation, management and communication) in primary Production, in Transformation, in Storage and in Transportation.
- European regulations and commercial requirements (Eurep-gap, Charte PERFECT, Organic farming "bio",...)
2. Identification of the chemical dangers :
- heavy metals, nitrates, pesticides
- Estimation of the exposition and characterization of the risk (quotation of the harmful effects).
3. The management of the risks, hygiene and mastery of the provisions: management of the chemical risks (evaluation of the alternate strategies ¿ selection and implemented strategic measures) :
3.1. Integrated pest management - integrated farming and sustainable development - pesticides' use reduction strategy (in Europe)
3.2. Management of the nitrates and residues risks (environment, health)
- definition of the risk "residues" (definition, exposition calculations of the consumers)
- analytical methods for the determination of pesticides residues
- national and European control program of the residues
- laboratories accredited for the analysis of the residues
3.3. Safe use of pesticides
- definition of the risk for operators
- mathematical models of calculation of the exposition(risk assesment methods)
4. Exercises and cases studies (individual work and in group)
5. Presentations and Synthesis
Course objective :  Characterize the risks linked to the use of pesticides in the production process, in relation with the European regulations in food safety and commercial requirements of the sector of the primary vegetable production.
After completing the course the student is expected to
- To understand the basic concept of the risk analysis method
- To be able to use the risk analysis method for the assesment of the consummer exposure to pesticide residues
- To be able to use the risk analysis to estimate the exposure of workers and to use the mathematic models to predict the level of their exposure to pesticides
