Thermal sterilisation : batch and continuous sterilisation, decimal reduction time, Z variable. Design of a continuous fermenter : influence of the microbial process, washing phenomenon, influence of the state of mixing, recycling. Design of a batch fermenter : influence of the microbial process, feed batch. Comparison of continuous and batch operations. Organization :   The course is scheduled for the first quadrimester.
