| Course contents : | · General principles and concepts of risks analysis related to foodstuffs of animal origin.
· Principles, concepts and specific methods for quantitative microbial risk assessment.
· Principles, concepts and specific methods for quantitative assessment of chemical risks.
· Risks assessment as an under-process of a Scientific Committee's formal advice.
· Precautionary principle. |

| Course objective : | · The student will be able to understand and criticize microbiological and chemical risk assessment related to foodstuffs of animal origin |
|
| Prerequisites : | · The student would have previously followed a basic course of Epidemiology and Statistics. |
|
| Organization : | · 5 hours theoretical course
· The interactions between teachers and students take place during the course and directed works.
· The teachers are available to answer questions at the end of the course and during the directed works. |

| Assessment : | · A written exam is organized. It consists in questions and sub-questions related to the course (a point when the answer is right). The questions deal with general principles and concepts, as well as risks analysis exercises. |
