Course objective :  The objectives of this course are :
- training to the basic principles for the management of nutritional quality of foods (nutritional requirements, recommended daily intakes, nutritional recommendations, nutritional value of foods from animal origin) ;
- introduction to the legal basis in the matter of nutritional labelling (food composition, nutritional and health claims) and novel food marketing ;
- awareness of relation between animal foods and health ;
- presentation of some nutrition education tools.

Assessment :  Final evaluation : written examination (open questions).
