VETE2008-1  Physical-chemical analysis and toxicology of animal-based foodstuffs

Course contents :  The course presents two parts :

- The first part concerns the basic principles of the methods of analysis used in laboratories involved in the control of quality and the safety of food products, for the chemical aspects.

- The second part is a lesson of toxicology of food products, which makes an inventory of the chemical risks associated with food products (residues and contaminants, additives, pesticides, brominated flame retardatants, migrating chemicals, allergens, ...).
Course objective :  The goal of this lecture is to inform the veterinarian who will be involved in the field of the food safety and quality :

- about the available analytical methods to detect chemical hazards in food,

- about the toxicology of these chemical hazards.

Assessment :  Examen écrit (problèmes, concerne la partie "analyse") et oral à livre ouvert (pour la partie "toxicologie").
