Course contents :  Practical approach of quality and safety management of foodstuffs from animal origin : analysis of process chart, HACCP, risk assesment
Course objective :  The practical work is complementary to knowledge in the field of food science acquired during the 2 courses included in the programme of the 1st doctorat (VETE1023-1 et VETE1024-1).
Prerequisites :  Previous lectures about Food Science (1st Master)

Who ? The attendance is required. Justification has to be submitted to the secretary of the Department before the end of the week.
Written notes :  Cfr theoretical courses.

Assessment :  Evaluation during practical work based on student's participation + form fullfilled by the student.
