Learning unit contents

This course is based on the concept of food quality, safety and authenticity. The knowledge on the formulation of a food product will be merged with the chemical and analytical aspects to be able to characterize and study not only the composition of the food itself but to answer to question related to its safety, conservation, production method, fraud risks, etc. The students will be provided with general knowledge to navigate the reference organizations for food control purposes and it will be asked to develop and compare analytical methods.

Learning outcomes of the learning unit

By the end of this course, the student will be able to elaborate a logical and appropriate analytical design to evaluate different aspects of food quality. To select among different analytical techniques the ones that best fit the goal pre-assigned, to properly use it and to critically discuss the outcomes.

To critically evaluate a protocol; develop an analytical method; learn to interpret the results

Prerequisite knowledge and skills

Students must master the basic concepts of analytical chemistry. The main subjects are: chromatography, mass spectrometry and basic statistics.

Planned learning activities and teaching methods

The course will be a mixture of frontal lessons, self-project and TPs. 

Attendance at ALL laboratory sessions is mandatory and the work will be performed in groups.
