Course contents : Practical approach of quality and safety management of foodstuffs from animal origin : analysis of process chart, HACCP, risk assesment
Course objective : The practical work is complementary to knowledge in the field of the 5 theoretical courses included in the programme of the 1st doctorat (Introduction to physicochemical and toxicological analysis, microbiology, technology and quality management systems).
Prerequisites : Other lectures about foodstuffs of animal origin (1st Doctorat)

Written notes : Cfr theoretical courses.

Work documents available during the practical work.
Assessment : Evaluation during practical work based on student's participation + form fullfilled by the student.
