Course contents : · Industrial principles of enzyme production
· Drying of thermosensitive molecules
· Temperatue induced denaturation of microorganisms
· Study of sugar industry and brewery.
Course objective : The different subjects studied are
- the industrial principles of the production of enzymes and metabolites of microorganisms.
- Enhanced knowledge in the drying of temperature sensitive molecules and microorganisms
Two different food industry processes : sugar industry and brewery are studied.
Prerequisites : Industrial microbiology
Organization : The lectures are given in 15 modules. Manufacturing costs and profitability are approached for the processes studied. A one-day visit is organised at IMbev brewery in Jupille (+ wastewater treatment plant) and at the sugar rafinery "La tirlemontoise".

The tours are guided by production managers. The students are accompanied by an engineer from the CWBI to link the information with the lectures and approach the costs, selling prices,...

Assessment : Oral examination
